I have been an Ovo-Lacto Vegetarian for a few years and am considering making the switch to a full Vegan diet. I decided to become a vegetarian because I could no longer disassociate the meat on my plate from the loving, kind and peaceful animal it had once been. I have always been an animal lover, so I guess this was a natural progression. I am not a diet or nutrition expert by any means, I am just a woman on a mission to eat better, feel better and live better.

Day 3

I did well today, had a veggie burger for lunch and vegan red beans and rice for dinner.  The dinner was AWESOME!  I got the recipe from "Vegan Cooking for Carnivores" by Roberto Martin, and it was really delicious.  My parents even loved it, and they don't generally eat many of the vegetarian dishes I cook.  Especially my mom, and she really did like this one.  

I'm feeling rather good, too.  It's been difficult at times to make sure I'm not accidentally reaching for something out of habit, but I'll get used to it.

  1. Good morning Cari! Thank you for sharing your journey with us! It's funny what you said about the Goldfish... I, like you,
    Had to eat out unexpectedly... Went to Souper Salad and had to pass up a lot of the things I would have normally put on my plate. My daughter got a bowl full of Goldfish and I popped one in my mouth without even thinking about it. Oops! Stopped myself before i ate anymore... Otherwise, I've been doing well though. I'm glad I have already been switching over to meatless recipes over the past year and have already done so much research during that time otherwise I know this challenge would have been much more difficult. One of the things I've noticed is how often I mindlessly stuff something in my mouth... Was making a grilled cheese sandwich for Jim last night and that part of the cheese that spills out and gets all crispy on the pan was so tempting... I was strong though... Even just slicing the cheese to put on the sandwich... Had to consciously not eat a slice... Even told my daughter, don't let me eat a slice, k? Lol! Overall, doing great and feeling good... Lots of salads, veggie wraps made at home, ate a delicious vegan pasta dish out at lunch yesterday with a salad, no Parmesan for me, thank you! Really enjoying this so far... Thanks Cari! :)

  2. So how has your vegan week gone so far? Mine has been great! I started Monday so my last official day will be tomorrow. I have to say, I feel pretty great... Not to be all TMI, but it was a little gassy in the early part of the week, due to all the extra fiber, I'm sure, but now everything is working properly and I'm feeling good! Time for a snack... Let me know your thoughts as you wrap up vegan week. Have a great evening! Dawn

  3. I didn't realize it had been so many days since I posted! Oops! It's been a hectic week for me. I've been doing fairly well in that what I have eaten has been vegan. Unfortunately, I haven't been eating enough because of the stress the past few days, so I can't really speak for how I'm feeling. I would probably feel a lot better if were eating properly.

    I'm so glad you're feeling good and had a good week! It's certainly made me more aware of everything I eat. Some of the things I wouldn't think I'd have to check turn out to have animal products in them!
